These delicious and healthy energy balls are perfect for a quick snack, combining the richness of cacao with the sweetness of dates and the crunch of almonds and coconut.

Ingredients
  

Main ingredients

  • 1 cup shredded coconut
  • 1 cup raw almonds
  • 20 large medjool dates, pitted
  • 1/3 cup cacao or cocoa powder
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 cup shredded coconut, to decorate Optional

Instructions
 

  • Add ingredients to a food processor and process until a sticky dough forms.
  • Use a cookie scoop to form 18 balls and roll with hands.
  • Optional: roll each ball in shredded coconut to decorate.

Notes

Store in an airtight container in the fridge for up to a week.
