Ingredients
  

Meat

  • 2 lbs venison backstrap (907 g)
  • 0.25 cup olive oil (60 ml)
  • 0.25 cup honey (60 ml)
  • 2 tablespoons soy sauce (30 ml)
  • 2 tablespoons lime juice (30 ml)
  • 2 tablespoons adobo sauce from canned chipotle peppers (30 ml)
  • 1 piece chipotle pepper in adobo sauce, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin (5 g)
  • 1 teaspoon smoked paprika (5 g)
  • 1 teaspoon salt (5 g)
  • 0.5 teaspoon black pepper (1 g)

Instructions
 

  • Combine olive oil, honey, soy sauce, lime juice, and adobo sauce to make the marinade.
  • Add chopped chipotle pepper and minced garlic, then stir in cumin, paprika, salt, and pepper.
  • Pour marinade over venison in a resealable bag, seal, and refrigerate for at least 2 hours or overnight.
  • Preheat grill to medium-high. Remove venison from marinade and grill 4-5 minutes per side for medium-rare.
  • Let rest for 5-10 minutes, then slice against the grain and serve.
