Ingredients
  

Vegetables

  • 1 tablespoon vegetable oil
  • 4 cups vegetable broth
  • 1 cup water
  • 1 can (15 oz) creamed corn
  • 1 can (15 oz) whole kernel corn, drained
  • 0.5 cup carrots, finely chopped
  • 0.5 cup peas
  • 1 inch ginger, minced
  • 2 tablespoons soy sauce or tamari
  • to taste Salt and pepper
  • 2 tablespoons cornstarch mixed with water (cornstarch slurry)
  • 0.5 cup tofu, diced (optional)
  • 2 green onions chopped for garnish
  • optional chili flakes for garnish

Instructions
 

  • Heat oil and sauté minced ginger until fragrant.
  • Add broth and water, bring to a boil, then stir in corn and vegetables. Simmer 5 minutes.
  • Season with soy sauce, salt, and pepper. Stir in cornstarch slurry and cook until thickened.
  • Add tofu if using, heat through, then serve garnished with green onions and chili flakes.
