Chinese Beef and Broccoli

Ingredients
  

Marinade

  • 1 lb flank steak (thinly sliced against the grain)
  • 2 tbsp soy sauce (for marinade)
  • 1 tbsp cornstarch (for marinade)
  • 1 tbsp neutral oil (for marinade)

Sauce

  • 1/2 cup beef broth (low-sodium preferred)
  • 1/4 cup soy sauce (for sauce, low-sodium preferred)
  • 2 tbsp oyster sauce
  • 1 tbsp cornstarch (for sauce)
  • 1 tsp sugar
  • 1 tsp sesame oil (toasted preferred)
  • 2 tbsp neutral oil (divided, for stir-frying)
  • 3 cloves garlic (minced)
  • 1 tbsp fresh ginger (minced or grated)

Vegetables

  • 1 lb broccoli florets (fresh)
  • 2 tbsp water (for steaming broccoli)

Instructions
 

  • Marinate beef with soy sauce and cornstarch for 15 minutes.
  • Mix beef broth, soy sauce, oyster sauce, cornstarch, sugar, and sesame oil to make sauce.
  • Heat oil, sear beef 30 seconds, then stir-fry until browned. Transfer to plate.
  • Add oil, garlic, and ginger; stir-fry 30 seconds.
  • Add broccoli and water, cover, steam 1-2 minutes until bright green and crisp-tender. Return beef, add sauce, cook 30-60 seconds until thickened. Serve over rice.

Notes

Use high heat for stir-frying to prevent sticking and ensure quick cooking.
