Ingredients
  

Pasta and Noodles

  • 240 g uncooked spaghettini (or thin rice noodles)
  • 400 g extra lean ground beef (mince)

Vegetables

  • 1 unit onion, finely diced
  • 1 unit red pepper, finely diced
  • 1 unit green pepper, finely diced

Aromatics

  • 2 teaspoons minced garlic
  • 2 teaspoons grated fresh ginger

Sauce and Flavorings

  • 4 tablespoons light soy sauce
  • 1 tablespoon dark soy sauce
  • 3 tablespoons maple syrup
  • 4 tablespoons sambal oelek
  • 1 tablespoon tomato paste

Garnish

  • 3 spring onions green part, finely sliced
  • to taste black pepper

Cooking Spray

  • as needed low calorie spray oil

Instructions
 

  • Cook noodles according to package instructions, drain, spray with oil, and set aside.
  • Spray a wok or large pan with oil, cook beef, onion, peppers, ginger, and garlic until beef is browned and vegetables are tender.
  • Mix soy sauces, maple syrup, sambal oelek, and tomato paste in a bowl.
  • Add sauce to beef mixture, then toss in noodles until coated and heated through. Season with black pepper and garnish with spring onions.

Notes

Use lean beef and spray oil to keep it light. Adjust spice level with sambal oelek.
