Instructions
Cook noodles according to package instructions, drain and rinse under cold water.
Mix chili flakes, sugar, soy sauces, oyster sauce, mirin, and dark soy in a bowl.
Heat peanut oil, cook beef until charred, then flip and break apart.
Add onion, green parts, garlic, and ginger; cook until fragrant.
Add noodles, pour sauce, stir to coat, and stir-fry for 2 minutes. Drizzle sesame oil and serve.
Notes
For extra flavor, garnish with additional green onions or sesame seeds.
