Ingredients
  

Salad Ingredients

  • 1 can chickpeas, rinsed and drained (425g)
  • 2 pieces ripe peaches, pitted and diced
  • 1/2 cup red onion, thinly sliced (75g)
  • 1/2 cup cucumber, diced (75g)
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup crumbled feta cheese (optional) (30g)
  • 3 tablespoons lime juice, freshly squeezed (45ml)
  • 2 tablespoons honey (30ml)
  • 2 tablespoons olive oil (30ml)
  • 1 teaspoon dijon mustard
  • salt and freshly ground black pepper to taste

Instructions
 

  • Whisk together lime juice, honey, olive oil, and Dijon mustard. Season with salt and pepper.
  • Combine chickpeas, peaches, red onion, cucumber, and mint in a large bowl. Add feta if using.
  • Pour dressing over salad and toss gently to coat.
  • Chill in the refrigerator for at least 15 minutes before serving.

Notes

For extra flavor, let the salad sit for a while before serving.
