Instructions
Whisk together lime juice, honey, olive oil, and Dijon mustard. Season with salt and pepper.
Combine chickpeas, peaches, red onion, cucumber, and mint in a large bowl. Add feta if using.
Pour dressing over salad and toss gently to coat.
Chill in the refrigerator for at least 15 minutes before serving.
Notes
For extra flavor, let the salad sit for a while before serving.
