Ingredients

  • 1 can 15 oz chickpeas drained and rinsed
  • 1 piece ripe avocado diced
  • 0.5 cup cherry tomatoes halved
  • 0.25 cup red onion finely chopped
  • 0.25 cup fresh cilantro chopped
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp honey
  • 0.5 tsp Dijon mustard
  • 1 clove garlic minced
  • to taste Salt and pepper

Instructions
 

  • Combine chickpeas, avocado, tomatoes, onion, and cilantro in a large bowl.
  • Whisk together olive oil, lemon juice, honey, mustard, garlic, salt, and pepper in a small bowl.
  • Pour vinaigrette over salad and toss gently.
  • Let sit for 5-10 minutes to blend flavors, then serve or refrigerate up to 2 hours.

Notes

For extra flavor, add a sprinkle of feta cheese or a dash of hot sauce.
