Chicken with Apples and Cider

Ingredients
  

Oil

  • 2 tablespoons canola or vegetable oil (divided)

Apple

  • 1 medium Granny Smith Apple (cored and sliced)

Brown Sugar

  • 1 tablespoon brown sugar

Chicken Breast

  • 4 ounces chicken breasts about 113 g each

Ground Cinnamon

  • ¼ teaspoon ground cinnamon

Salt

  • ¼ teaspoon salt

Black Pepper

  • ¼ teaspoon freshly ground black pepper

Onion

  • 1 medium red or yellow onion (thinly sliced)

Apple Cider or Juice

  • ½ cup apple cider or apple juice no sugar added

Cider Vinegar

  • ¼ cup cider vinegar

Pasta

  • 2 cups hot cooked whole wheat pasta (or any pasta)

Instructions
 

  • Cook pasta while preparing the rest of the meal.
  • Heat 1 tablespoon oil in a skillet, sauté apple until lightly browned (~5 min), add brown sugar, cook 3-5 min, then remove.
  • Season chicken with cinnamon, salt, pepper. Cook 4-5 min per side until browned, then remove.
  • Cook onion in same pan for 6-8 min, add cider and vinegar, simmer 2 min. Return chicken, cook 4-5 min until done.
  • Add apples back, heat through. Serve ½ cup pasta topped with chicken and ¼ cup sauce.

Notes

Use a nonstick skillet for easier cleanup and better browning.
