hot cooked whole wheat pasta
(or any pasta)
Instructions
Cook pasta while preparing the rest of the meal.
Heat 1 tablespoon oil in a skillet, sauté apple until lightly browned (~5 min), add brown sugar, cook 3-5 min, then remove.
Season chicken with cinnamon, salt, pepper. Cook 4-5 min per side until browned, then remove.
Cook onion in same pan for 6-8 min, add cider and vinegar, simmer 2 min. Return chicken, cook 4-5 min until done.
Add apples back, heat through. Serve ½ cup pasta topped with chicken and ¼ cup sauce.
Notes
Use a nonstick skillet for easier cleanup and better browning.
