Ingredients
  

Butter

  • 2 tablespoons butter divided
  • 2 medium skinless, boneless chicken breast halves
  • 1 package chicken-flavored rice mix 6.9 ounces
  • 1.25 cups water
  • 1 cup apple juice
  • 1 apple peeled, cored, and chopped apple
  • 1 onion chopped onion
  • 0.25 cup raisins

Instructions
 

  • Melt 1 tablespoon butter in a skillet over medium-high heat. Cook chicken 2 minutes per side, then set aside.
  • Heat remaining butter, sauté rice until golden, then add water, apple juice, apple, onion, raisins, and seasoning. Bring to boil.
  • Place chicken over rice, cover, and simmer 15-20 minutes until cooked and rice is tender.
  • Let stand 5 minutes before serving.

Notes

Use a meat thermometer to ensure chicken is fully cooked.
