Ingredients
  

Main Ingredients

  • 1 tablespoon olive oil
  • 1 lb boneless, skinless chicken breast, cut into bite-size pieces
  • 2 green onions green onions, thinly sliced, green and whites separated
  • 1 can 8 oz. tomato sauce
  • 2 cups chicken broth
  • 1 packet 1 oz. taco seasoning
  • 1 cup frozen corn
  • 1 bell pepper seeded and chopped
  • 1 cup long grain white rice

Instructions
 

  • Heat olive oil in a Dutch oven over medium heat. Add chicken and white green onion parts; cook until lightly browned.
  • Add tomato sauce, chicken broth, and taco seasoning; stir and bring to a low boil. Reduce to simmer for 5 minutes.
  • Stir in corn and bell pepper, then add rice. Bring to a boil, then reduce to simmer and cook, stirring occasionally, until rice is tender, adding water if needed.
  • When rice is cooked, remove from heat and serve with tortilla chips and toppings.

Notes

For extra flavor, garnish with fresh cilantro or cheese.
