1lbboneless, skinless chicken breast, cut into bite-size pieces
2green onionsgreen onions, thinly sliced, green and whites separated
1can8 oz. tomato sauce
2cupschicken broth
1packet1 oz. taco seasoning
1cupfrozen corn
1bell pepperseeded and chopped
1cuplong grain white rice
Instructions
Heat olive oil in a Dutch oven over medium heat. Add chicken and white green onion parts; cook until lightly browned.
Add tomato sauce, chicken broth, and taco seasoning; stir and bring to a low boil. Reduce to simmer for 5 minutes.
Stir in corn and bell pepper, then add rice. Bring to a boil, then reduce to simmer and cook, stirring occasionally, until rice is tender, adding water if needed.
When rice is cooked, remove from heat and serve with tortilla chips and toppings.
Notes
For extra flavor, garnish with fresh cilantro or cheese.
