Instructions
In a bowl, combine olive oil, lime juice, chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper.
Add chicken thighs to the marinade and coat well. Let sit for at least 15 minutes (or up to 2 hours in the fridge for best flavor).
Heat a skillet or grill over medium-high heat. Cook chicken for 6–7 minutes per side or until fully cooked and charred at edges.
Let the chicken rest, then chop into bite-sized pieces.
Warm tortillas on the skillet or over an open flame.
Assemble tacos with chopped chicken, onions, cilantro, and a squeeze of lime. Serve immediately.
Notes
For best results, let the chicken marinate for at least 15 minutes. Warm tortillas on a dry skillet or grill for a more authentic texture.
