Ingredients
  

  • 1 lb boneless skinless chicken thighs
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1/2 cup diced onion
  • 1/2 cup chopped fresh cilantro
  • Lime wedges for serving

Instructions
 

  • In a bowl, combine olive oil, lime juice, chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper.
  • Add chicken thighs to the marinade and coat well. Let sit for at least 15 minutes (or up to 2 hours in the fridge for best flavor).
  • Heat a skillet or grill over medium-high heat. Cook chicken for 6–7 minutes per side or until fully cooked and charred at edges.
  • Let the chicken rest, then chop into bite-sized pieces.
  • Warm tortillas on the skillet or over an open flame.
  • Assemble tacos with chopped chicken, onions, cilantro, and a squeeze of lime. Serve immediately.

Notes

For best results, let the chicken marinate for at least 15 minutes. Warm tortillas on a dry skillet or grill for a more authentic texture.
