Instructions
Heat oil in a large pot over medium heat. Cook onion and celery until soft, about 6 minutes. Add garlic and red pepper flakes; cook 1 minute.
Add chicken broth and lemon juice; bring to a boil. Add chicken breasts, simmer until cooked, then shred.
Return shredded chicken to pot, add artichokes, cheeses, and cream; cook until cheeses melt. Stir in spinach, garnish with parsley and parmesan.
Notes
For a creamier texture, blend a portion of the soup before adding spinach.
