Ingredients
  

  • 6 thin-sliced chicken breasts
  • 8 oz container green onion cream cheese
  • ¼ cup olive oil
  • ½ cup chicken broth
  • 1 large package package sliced mushrooms
  • 1 small bag bag fresh baby spinach
  • 1 dash dash Weber Herb and Garlic Seasoning
  • 8 oz oz shredded mozzarella cheese

Instructions
 

  • Preheat oven to 375°F (190°C). Arrange chicken breasts in a 13x9-inch baking dish and season with salt, pepper, and Weber Herb and Garlic Seasoning.
  • Sauté mushrooms in olive oil until softened, then layer over chicken breasts followed by fresh spinach.
  • Mix green onion cream cheese, chicken broth, and olive oil to create a creamy sauce. Pour over the chicken, mushrooms, and spinach.
  • Cover with foil and bake for 20 minutes, then remove foil and bake for another 20 minutes.
  • Sprinkle shredded mozzarella cheese over the dish and bake for an additional 5-10 minutes, or until cheese is melted and bubbly.

Notes

For the best flavor, use fresh spinach and adjust seasoning to taste.
