Instructions
Preheat oven to 375°F (190°C). Arrange chicken breasts in a 13x9-inch baking dish and season with salt, pepper, and Weber Herb and Garlic Seasoning.
Sauté mushrooms in olive oil until softened, then layer over chicken breasts followed by fresh spinach.
Mix green onion cream cheese, chicken broth, and olive oil to create a creamy sauce. Pour over the chicken, mushrooms, and spinach.
Cover with foil and bake for 20 minutes, then remove foil and bake for another 20 minutes.
Sprinkle shredded mozzarella cheese over the dish and bake for an additional 5-10 minutes, or until cheese is melted and bubbly.
Notes
For the best flavor, use fresh spinach and adjust seasoning to taste.
