Ingredients
  

  • 2 cups cups cooked chicken breast, shredded or chopped
  • 1/2 cup cup mayonnaise
  • 1 tablespoon tablespoon Dijon mustard
  • 1/2 cup cup celery, finely diced
  • 1/4 cup cup red onion, finely chopped
  • 2 tablespoons tablespoons fresh parsley, chopped
  • Salt and pepper to taste
  • 4–6 slices slices leafy greens (arugula, lettuce, etc.)
  • 4 slices slices bread of choice (sourdough, whole grain, brioche), toasted

Instructions
 

  • Shred or chop the cooked chicken and place in a large bowl.
  • Add the celery, red onion, and parsley to the chicken.
  • In a small bowl, whisk together the mayonnaise, Dijon mustard, salt, and pepper.
  • Pour the dressing over the chicken mixture and gently stir to combine.
  • Toast the bread slices until golden brown.
  • Lay greens on one slice of each sandwich and spoon the chicken salad on top. Top with the second slice of bread, press gently, and serve immediately.

Notes

For a crunchier texture, add some chopped nuts or seeds to the chicken salad. You can also customize with your favorite herbs or spices.
