cooked chicken breast, shredded or chopped

Instructions
Shred or chop the cooked chicken and place in a large bowl.
Add the celery, red onion, and parsley to the chicken.
In a small bowl, whisk together the mayonnaise, Dijon mustard, salt, and pepper.
Pour the dressing over the chicken mixture and gently stir to combine.
Toast the bread slices until golden brown.
Lay greens on one slice of each sandwich and spoon the chicken salad on top. Top with the second slice of bread, press gently, and serve immediately.
Notes
For a crunchier texture, add some chopped nuts or seeds to the chicken salad. You can also customize with your favorite herbs or spices.
