Chicken Ramen Stir Fry

Ingredients
  

Noodles

  • 2 packages ramen noodles discard seasoning packets
  • 1 lb boneless chicken thighs cut into bite-sized pieces
  • 2 tbsp vegetable oil
  • 1 red bell pepper red bell pepper sliced
  • 1 cup snap peas
  • 1 carrot carrot julienned
  • 3 cloves garlic minced
  • 1 tbsp ginger minced
  • 3 green onions green onions sliced, white and green parts separated
  • 1/4 cup soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp sesame oil
  • 1 tsp sugar
  • 1/4 tsp white pepper

Instructions
 

  • Boil water and cook ramen noodles for 2 minutes, then drain.
  • Mix soy sauce, oyster sauce, sesame oil, sugar, and white pepper to make the sauce.
  • Stir-fry chicken in 1 tbsp oil until golden, then remove from pan.
  • Stir-fry vegetables and aromatics in remaining oil, then add chicken and noodles. Toss with sauce and heat through.
  • Garnish with green parts of green onions and serve hot.

Notes

Use fresh vegetables for best flavor and texture.
