  • 2 teaspoons chili powder
  • 2 teaspoons paprika
  • 2 teaspoons cumin
  • 1 teaspoon smoked paprika

Chicken and Vegetables

  • 1.5 pounds boneless (skinless chicken thighs)
  • 1 tablespoon neutral oil (for frying)
  • 1 yellow onion yellow onion (peeled and thinly sliced)
  • 2 bell peppers trimmed, seeded, and sliced into strips
  • 1/2 cup cilantro (minced)

Seasonings

Quinoa and Broth

  • 1 cup quinoa (rinsed)
  • 2 cups water or vegetable stock

Instructions
 

  • Cook the chicken with spices and lime juice, then shred.
  • Sauté onions and peppers until tender, then set aside.
  • Cook quinoa in water or broth until fluffy.
  • Assemble bowls with chicken, quinoa, beans, vegetables, and toppings.
  • Serve with lime wedges, sour cream, and shredded cheese.

Notes

For extra flavor, marinate the chicken in spices and lime juice for 30 minutes before cooking.
