Ingredients
  

olive oil

  • 2 tablespoons olive oil

vegetables

  • 1 medium onion chopped
  • 2 cloves garlic minced

liquids

  • 4 cups chicken broth

potatoes

  • 2 large potatoes peeled and diced

carrots

  • 2 large carrots sliced

celery

  • 2 stalks celery sliced

spices

  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano

chicken

  • 2 cups cooked chicken shredded

dairy

  • 1 cup milk

seasonings

  • to taste Salt and pepper

garnish

  • as needed Fresh parsley for garnish

Instructions
 

  • Heat olive oil and sauté onion and garlic until translucent.
  • Add chicken broth and bring to a boil.
  • Stir in potatoes, carrots, celery, thyme, and oregano; simmer until vegetables are tender.
  • Add chicken and milk; heat through. Season with salt and pepper.
  • Serve hot, garnished with parsley.

Notes

For a creamier texture, blend a portion of the soup before serving.
