Ingredients
  

Pasta

  • 8 oz rotini pasta

Protein

  • 1 lb chicken breast, boneless and skinless

Vegetables

  • 1 tbsp olive oil, divided
  • 1 each zucchini, diced
  • 1 each red bell pepper, diced
  • 1 cup broccoli florets
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 0.5 tsp Italian seasoning
  • to taste Salt and pepper
  • 0.25 cup grated Parmesan cheese

Garnish

  • optional Fresh basil for garnish

Instructions
 

  • Cook pasta in salted boiling water until al dente, then drain and set aside.
  • Season chicken with salt, pepper, and Italian seasoning. Cook in a skillet with 1 tbsp olive oil until golden and cooked through, then rest and slice.
  • Sauté garlic in remaining olive oil, add vegetables, and cook until tender-crisp.
  • Combine cooked pasta with vegetables, add cherry tomatoes, and season to taste. Cook briefly to blend flavors.
  • Top with sliced chicken, sprinkle Parmesan, garnish with basil if desired, and serve warm.

Notes

For extra flavor, add a squeeze of lemon or a drizzle of balsamic vinegar before serving.
