Instructions
Cook pasta in salted boiling water until al dente, then drain and set aside.
Season chicken with salt, pepper, and Italian seasoning. Cook in a skillet with 1 tbsp olive oil until golden and cooked through, then rest and slice.
Sauté garlic in remaining olive oil, add vegetables, and cook until tender-crisp.
Combine cooked pasta with vegetables, add cherry tomatoes, and season to taste. Cook briefly to blend flavors.
Top with sliced chicken, sprinkle Parmesan, garnish with basil if desired, and serve warm.
Notes
For extra flavor, add a squeeze of lemon or a drizzle of balsamic vinegar before serving.
