Ingredients
  

Marinade

  • 0.25 cup olive oil divided, with 1 tablespoon reserved for cooking
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • 0.5 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 0.5 lime juice of 1/2 lime

Main ingredients

  • 24 ounces chicken tenderloins
  • 3 bell peppers green, red, yellow, sliced
  • 0.5 red onion thinly sliced
  • 0.5 cup sour cream
  • 0.5 lime juice of 1/2 lime
  • 2 tablespoons chopped cilantro plus more for garnish
  • 4 cups cooked white rice for serving

Instructions
 

  • Combine 1/4 cup olive oil, spices, and lime juice in a bag. Marinate chicken for 15-20 minutes.
  • Heat 1 tablespoon olive oil in a pan. Cook marinated chicken 5 minutes per side until cooked through. Remove and set aside.
  • Add peppers and onions to the pan. Cook until crisp-tender, scraping browned bits.
  • Cut cooked chicken into bite-sized pieces. Mix sour cream, lime juice, and cilantro for sauce.
  • Assemble bowls with rice, peppers, chicken, and drizzle with sour cream sauce. Garnish with cilantro and serve.

Notes

For extra flavor, marinate the chicken longer or add your favorite toppings.
