Instructions
Combine 1/4 cup olive oil, spices, and lime juice in a bag. Marinate chicken for 15-20 minutes.
Heat 1 tablespoon olive oil in a pan. Cook marinated chicken 5 minutes per side until cooked through. Remove and set aside.
Add peppers and onions to the pan. Cook until crisp-tender, scraping browned bits.
Cut cooked chicken into bite-sized pieces. Mix sour cream, lime juice, and cilantro for sauce.
Assemble bowls with rice, peppers, chicken, and drizzle with sour cream sauce. Garnish with cilantro and serve.
Notes
For extra flavor, marinate the chicken longer or add your favorite toppings.
