  • 2 whole chicken breasts, uncooked
  • 2 cups chicken broth
  • 1 Teaspoon garlic powder
  • 1 can (10 oz) diced tomatoes
  • 1 medium onion, diced
  • 12 corn tortillas corn tortillas
  • 2 cups grated Cheddar cheese
  • 2 cups grated Monterey Jack cheese
  • 2 Tablespoons vegetable oil
  • 2 Tablespoons flour
  • 4 Tablespoons chili powder
  • 1/2 Teaspoon garlic powder
  • 1/2 Teaspoon salt
  • 1/2 Teaspoon cumin
  • 1/4 Teaspoon onion powder
  • 1/4 Teaspoon cayenne pepper

Instructions
 

  • Simmer chicken, onion, tomatoes, garlic powder, and broth until tender; cool and shred chicken.
  • Spread 1/2 cup enchilada sauce in a baking dish.
  • Fill tortillas with chicken, sauce, and cheese; roll and place in dish.
  • Top with remaining sauce and cheese; bake at 400°F for 20 minutes until bubbly.
