  • 1.25 pounds boneless skinless chicken thighs 4 pieces
  • 1 teaspoon garlic powder
  • 0.5 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup pearl couscous
  • 2 garlic cloves garlic minced
  • 1 tablespoon fresh thyme leaves
  • 2 cups chicken broth
  • 0.5 lemon lemon sliced

Instructions
 

  • Preheat oven to 400°F. Pat chicken dry and season with garlic powder, paprika, salt, and pepper.
  • Heat olive oil in skillet, cook chicken until golden, about 3–4 minutes per side. Remove and set aside.
  • Add couscous, garlic, and thyme to skillet; toast for 2–3 minutes. Deglaze with chicken broth and bring to a boil.
  • Return chicken to skillet, add lemon slices, then bake in oven for 15 minutes until cooked through and couscous puffs up.

Notes

For extra flavor, add fresh herbs or a squeeze of lemon before serving.
