Ingredients
  

Pasta

  • 8 oz uncooked pasta (rotini or penne)

Lettuce

  • 2 hearts hearts of Romaine lettuce

Chicken

  • Shredded rotisserie chicken or chopped chicken breasts Shredded rotisserie chicken or chopped chicken breasts

Dressing

  • 2 teaspoons Dijon mustard
  • 2 Tablespoons fresh lemon juice
  • 2 teaspoons vinegar (as a Worcestershire sauce alternative)
  • 3/4 cup mayonnaise
  • 2 teaspoons minced garlic
  • 1/3 cup finely grated Parmesan cheese

Instructions
 

  • Cook pasta until al dente, then drain and rinse with cold water.
  • Mix Dijon mustard, lemon juice, vinegar, mayonnaise, garlic, and Parmesan until smooth.
  • Chop romaine and add to the dressing.
  • Stir in cooked pasta and shredded chicken, then toss to coat.
  • Serve immediately or chill for better flavor.

Notes

For extra flavor, add croutons or a sprinkle of additional Parmesan before serving.
