Instructions
Season chicken with salt and pepper. Sear in 1 tbsp olive oil until golden and cooked through, then set aside.
Sauté diced onion in the same skillet until softened, then add garlic and cook 30 seconds.
Add rice and toast briefly, then stir in tomatoes, beans, spices, and broth. Bring to a boil.
Return chicken to skillet, cover, and simmer 20–25 minutes until rice is tender and broth absorbed.
Sprinkle cheese on top, cover, and let melt for 5 minutes. Garnish with tomatoes, green onions, and cilantro before serving.
Notes
For extra flavor, add a squeeze of lime or hot sauce before serving.
