  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and black pepper, to taste Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 cup uncooked long-grain white rice
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon chili powder
  • cups low-sodium chicken broth
  • 1 cup shredded cheddar or Mexican blend cheese
  • Cherry tomatoes, halved Cherry tomatoes for garnish
  • Chopped green onions Green onions for garnish
  • Fresh cilantro, chopped Cilantro for garnish

Instructions
 

  • Season chicken with salt and pepper. Sear in 1 tbsp olive oil until golden and cooked through, then set aside.
  • Sauté diced onion in the same skillet until softened, then add garlic and cook 30 seconds.
  • Add rice and toast briefly, then stir in tomatoes, beans, spices, and broth. Bring to a boil.
  • Return chicken to skillet, cover, and simmer 20–25 minutes until rice is tender and broth absorbed.
  • Sprinkle cheese on top, cover, and let melt for 5 minutes. Garnish with tomatoes, green onions, and cilantro before serving.

Notes

For extra flavor, add a squeeze of lime or hot sauce before serving.
