  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1.5 teaspoons smoked paprika
  • 1.5 teaspoons garlic powder
  • 1.5 teaspoons onion powder
  • to taste Salt and black pepper
  • 1 cup white rice, uncooked
  • 1 cup black beans, canned, drained and rinsed
  • 1 cup corn kernels, fresh or frozen
  • 1 piece avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 0.25 cup red onion, finely diced
  • to taste Fresh cilantro, chopped
  • 1 piece lime, cut into wedges
  • 0.25 cup sour cream or Greek yogurt
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 0.5 teaspoon cumin
  • to taste Salt

Water to thin dressing

Instructions
 

  • Cook rice according to package instructions; set aside.
  • Mix spices, rub chicken with oil, and cook in skillet 5-7 minutes per side; rest and slice.
  • Prepare dressing by whisking sour cream with lime juice, spices, and salt; add water to desired consistency.
  • Assemble bowls with rice, beans, corn, onion, tomatoes, avocado, chicken, and drizzle with dressing; garnish with cilantro and lime wedges.
