  • 2 pounds boneless skinless chicken thighs
  • 1 tablespoon olive oil
  • 2 teaspoons chili powder
  • 1.5 teaspoons kosher salt
  • 1 teaspoon ancho chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried Mexican oregano
  • 1 teaspoon ground cumin
  • 0.5 teaspoon smoked paprika
  • 2 tablespoons lime juice about 1 lime
  • 2 tablespoons olive oil or butter

Cilantro Lime Rice

  • 1 cup long-grain white rice rinsed and drained
  • 1 clove garlic minced
  • 2 cups broth or water
  • 0.5 teaspoon kosher salt plus more to taste
  • ¼ cup chopped cilantro
  • 1 lime zested and juiced

Toppings

  • to taste shredded lettuce
  • to taste shredded cheese or queso
  • to taste pico de gallo or black bean and corn salsa
  • to taste guacamole
  • to taste sour cream, Mexican crema, or plain Greek yogurt
  • to taste roasted tomato salsa or salsa verde

Instructions
 

  • Cook the cilantro lime rice: sauté rice in oil until white, add garlic, broth, and salt; simmer for 15 minutes.
  • Prepare the chicken: season thighs with spices and lime juice, then cook in a skillet until done; dice into small pieces.
  • Fluff the rice and stir in cilantro, lime zest, and lime juice; season with additional salt if needed.
  • Assemble the bowls with chicken, rice, and toppings of choice.
