Ingredients
  

Dough

  • 12 pieces flour tortillas see notes
  • 1.5 cups refried beans
  • 3 cups shredded iceberg lettuce
  • 3 cups mexican red rice see notes
  • 2.5 cups shredded chicken breast
  • 1 medium red bell pepper diced
  • 1 medium green pepper diced
  • 1 medium white onion diced
  • 2 large fresh tomatoes diced
  • 1 jalapeno pepper chopped jalapeno
  • 0.5 tsp ground cumin
  • 0.5 tsp garlic powder
  • 2 Tbsp olive oil
  • 1.5 cups chicken stock
  • to taste salt and pepper

Instructions
 

  • Heat olive oil and sautée bell peppers, onions, and jalapeño for 5 minutes.
  • Add tomatoes and chicken, cook for 3 minutes.
  • Pour in chicken stock, season with salt, pepper, garlic powder, and cumin. Simmer for 10 minutes.
  • Uncover and cook for 5 minutes until vegetables are soft and liquid reduces.
  • Remove from heat and let cool slightly before serving.

Notes

For best flavor, use fresh ingredients and adjust seasoning to taste.
