Instructions
Heat olive oil and sautée bell peppers, onions, and jalapeño for 5 minutes.
Add tomatoes and chicken, cook for 3 minutes.
Pour in chicken stock, season with salt, pepper, garlic powder, and cumin. Simmer for 10 minutes.
Uncover and cook for 5 minutes until vegetables are soft and liquid reduces.
Remove from heat and let cool slightly before serving.
