Ingredients

  • 1.5 pounds boneless, skinless chicken breasts
  • Salt and pepper to taste Salt and pepper for seasoning
  • 2 tablespoons olive oil for cooking
  • 4 cloves fresh garlic minced
  • 2 tablespoons unsalted butter
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 8 ounces fettuccine or your favorite pasta
  • Extra Parmesan cheese for garnish
  • Chopped fresh parsley optional parsley for garnish

Instructions
 

  • Season chicken with salt and pepper. Cook in olive oil over medium heat for 5-7 minutes per side until cooked. Rest and slice into strips.
  • In the same skillet, melt butter and sauté garlic for 1 minute. Add heavy cream and simmer. Whisk in Parmesan until smooth.
  • Cook pasta until al dente, drain, and reserve ½ cup of water. Add pasta and chicken to the sauce, tossing to coat. Thin with reserved water if needed.
  • Plate the pasta, garnish with extra Parmesan and parsley if desired. Serve immediately.

Notes

For a lighter version, use half-and-half instead of heavy cream.
