Instructions
Cook rice according to package instructions and set aside.
Heat oil, sauté onion and bell pepper until softened, then add ground chicken and cook until browned.
Add garlic and taco seasoning; cook 30 seconds. Pour in broth and salsa; simmer 2-3 mins.
Stir in cooked rice, then warm tortillas. Assemble burritos with cheese and filling, then roll.
Optional: Toast burritos in skillet for 1-2 mins per side for a crispy finish.
Notes
For extra flavor, add a squeeze of lime or chopped cilantro before serving.
