Ingredients
  

Meat and grains

  • 1 lb ground chicken
  • 1 cup white rice (uncooked) (approx 3 cups cooked)
  • 1 medium onion (diced)
  • 1 medium bell pepper (diced) red or green
  • 2 cloves garlic (minced)
  • 1 packet taco seasoning approx 1 oz
  • 0.5 cup chicken broth
  • 0.5 cup salsa mild or medium
  • 2 cups cheddar cheese (shredded) or Mexican blend
  • 6-8 large flour tortillas burrito size

Optional Garnish

  • cilantro optional cilantro for garnish

Instructions
 

  • Cook rice according to package instructions and set aside.
  • Heat oil, sauté onion and bell pepper until softened, then add ground chicken and cook until browned.
  • Add garlic and taco seasoning; cook 30 seconds. Pour in broth and salsa; simmer 2-3 mins.
  • Stir in cooked rice, then warm tortillas. Assemble burritos with cheese and filling, then roll.
  • Optional: Toast burritos in skillet for 1-2 mins per side for a crispy finish.

Notes

For extra flavor, add a squeeze of lime or chopped cilantro before serving.
