Ingredients

  • 2 tablespoons butter
  • 2-3 cloves garlic minced
  • 2 tablespoons flour
  • 1 cup chicken broth
  • 1 cup milk
  • 1/4 cup salsa verde
  • 1 can (4 oz.) diced green chilies
  • to taste Salt and pepper
  • 2 cups cooked shredded chicken
  • 4 cups cooked rice
  • 2 green onions green onions chopped
  • 1/3 cup sour cream
  • 1.5 cups pepper jack cheese

Garnish

  • optional Chopped fresh cilantro for garnish

Instructions
 

  • Melt butter in a skillet, cook garlic until fragrant, then stir in flour.
  • Whisk in broth and milk, simmer until thickened, about 5 minutes.
  • Add salsa verde, chilies, salt, pepper, chicken, rice, sour cream, and 1 cup cheese; mix well. Transfer to a greased baking dish.
  • Broil with remaining cheese until bubbly and golden, 2-3 minutes. Garnish with cilantro if desired.

Notes

Use cooked chicken and rice for quick assembly. Broil just until cheese is golden to prevent burning.
