Cheese

  • 1 cup shredded cheese Cheddar or Mexican blend works well.

Beans

  • 1 cup black beans Rinsed and drained.

Corn

  • 1 cup corn Can use canned or frozen.

Vegetables

  • 1 whole bell pepper Diced, any color.
  • 0.5 cup diced onion For added flavor.

Sauce

  • 1 cup salsa Choose your preferred brand or homemade.

Seasonings

  • to taste Salt and pepper Adjust to preference.

Garnish

  • as needed Chopped cilantro Adds freshness to the dish.

Instructions
 

  • Cook the rice according to package instructions.
  • Brown the ground chicken in a skillet, then add taco seasoning and cook until fully cooked.
  • Stir in black beans, corn, diced bell pepper, and onion; cook for a few minutes.
  • Mix cooked rice into the skillet, then add salsa and shredded cheese; stir until cheese melts.
