Ingredients
  

Cauliflower

  • 1 medium head of cauliflower or 3–4 cups riced cauliflower
  • 1 tablespoon butter or olive oil
  • 1/2 cup shredded cheddar cheese or cheese blend
  • 2 tablespoons cream cheese
  • to taste Salt and pepper
  • optional garlic powder, onion powder, chopped parsley, or grated parmesan

Instructions
 

  • Pulse cauliflower florets in a food processor until rice-like.
  • Sauté cauliflower in butter or oil for 5–7 minutes until tender.
  • Add cream cheese and shredded cheddar, stirring until melted and coated.
  • Season with salt, pepper, and optional spices. Serve warm.

Notes

For extra flavor, sprinkle with chopped parsley or grated parmesan before serving.
