Instructions
Combine cauliflower, carrot, celery, water, and bouillon in a pot. Boil and simmer until vegetables are tender.
Melt butter in a separate pan, whisk in flour, salt, and pepper. Gradually add milk, stirring until thickened.
Mix the cooked vegetables and liquid into the roux. Bring to a gentle boil and cook for 2 minutes.
Reduce heat and stir in cheese until melted. Add hot sauce if desired. Serve hot.
Notes
For a creamier texture, blend part of the soup before serving.
