Ingredients
  

Vegetables

  • 1 medium head cauliflower (cut into florets)
  • 1 medium carrot (shredded)
  • 0.25 cup celery (chopped)
  • 2.5 cups water
  • 2 teaspoons chicken or vegetable bouillon cube
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 0.75 tsp salt
  • 0.125 tsp pepper
  • 2 cups 2% milk
  • 1 cup shredded cheddar cheese
  • 0.5-1 tsp hot pepper sauce (optional)

Instructions
 

  • Combine cauliflower, carrot, celery, water, and bouillon in a pot. Boil and simmer until vegetables are tender.
  • Melt butter in a separate pan, whisk in flour, salt, and pepper. Gradually add milk, stirring until thickened.
  • Mix the cooked vegetables and liquid into the roux. Bring to a gentle boil and cook for 2 minutes.
  • Reduce heat and stir in cheese until melted. Add hot sauce if desired. Serve hot.

Notes

For a creamier texture, blend part of the soup before serving.
