Vegetables

  • 1 head cauliflower riced
  • 1 cup mushrooms sliced
  • 0.5 cup onions chopped
  • 1 stalk celery chopped
  • 3 cloves garlic minced
  • 1 cup spinach fresh
  • 1 cup vegetable broth for cooking
  • 2 tablespoons soy sauce

Instructions
 

  • Sauté mushrooms, onions, celery, and garlic until tender.
  • Add cauliflower rice and cook in vegetable broth until tender.
  • Stir in spinach and soy sauce, cook for 2 more minutes.

Notes

For extra flavor, add a splash of sesame oil or sprinkle with chopped green onions.
