Ingredients
  

Cauliflower

  • 1 medium head cauliflower cut into chunks
  • 2 tbsp unsalted butter divided
  • 3 eggs eggs whisked
  • 2 medium carrots small dice
  • 1 small onion small dice
  • 3 cloves garlic minced
  • 1 cup frozen peas
  • 3 tbsp low sodium soy sauce
  • 2 tbsp oyster sauce
  • 1 tsp sesame oil
  • 1-2 tsp sriracha to taste

Sesame seeds

  • to taste sesame seeds for garnish

Green onions

  • to taste green onions for garnish

Instructions
 

  • Pulse cauliflower in a food processor until rice-like; set aside.
  • Heat 1 tablespoon butter in a skillet, scramble eggs, then remove.
  • Add remaining butter, cook carrots, onion, and cauliflower until tender, then add garlic.
  • Return eggs, add peas, soy sauce, oyster sauce, sesame oil, and Sriracha; cook briefly.
  • Garnish with sesame seeds and green onions, serve immediately.

Notes

Use fresh vegetables for best flavor and texture.
