Ingredients
  

Vegetables

  • 1 small head cauliflower cut into small florets
  • 1.5 cups cubed butternut squash
  • 1/3 cup olive oil
  • 1 tbsp lime juice
  • 1 tsp paprika
  • 1 tsp coriander
  • 2 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp chili powder
  • 2 cloves garlic minced
  • 1 large celery root
  • 1/3 cup mayonnaise
  • 1/4 cup cilantro
  • 1 jalapeno jalapeno more or less depending on desired spiciness
  • 2 cups shredded cabbage
  • 1 avocado avocado cut into cubes
  • 1 tomato tomato roughly chopped
  • 1/2 red onion red onion thinly sliced

Instructions
 

  • Roast cauliflower and butternut squash with spices and olive oil.
  • Mix mayonnaise, lime juice, cilantro, and minced garlic to make a sauce.
  • Assemble tacos with roasted vegetables, cabbage, avocado, tomato, and red onion.

Notes

For extra flavor, toast the tortillas lightly before serving.
