Cajun Salmon Pasta

Ingredients
  

Protein

  • 2 pieces salmon fillets (skinless, boneless)

Pasta

  • 8 oz fettuccine or linguine pasta

Seasonings and Oils

  • 1 tablespoon Cajun seasoning
  • 1 tablespoon olive oil

Dairy and Vegetables

  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 red bell pepper red bell pepper, thinly sliced
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • 1/2 lemon juice of 1/2 lemon
  • Chopped parsley for garnish

Instructions
 

  • Cook pasta according to package instructions. Reserve 1/4 cup pasta water, drain, and set aside.
  • Rub salmon with Cajun seasoning. Sear in a skillet with olive oil for 4-5 minutes per side until cooked. Flake into chunks.
  • Melt butter, sauté garlic and bell pepper until softened. Add spinach and cook until wilted.
  • Pour in heavy cream, simmer, then stir in Parmesan cheese. Thin sauce with reserved pasta water if needed.
  • Toss pasta with sauce and salmon, squeeze lemon juice, season with salt and pepper. Garnish with parsley.

Notes

For extra flavor, add a pinch of smoked paprika to the Cajun seasoning.
