Instructions
Cook pasta according to package instructions. Reserve 1/4 cup pasta water, drain, and set aside.
Rub salmon with Cajun seasoning. Sear in a skillet with olive oil for 4-5 minutes per side until cooked. Flake into chunks.
Melt butter, sauté garlic and bell pepper until softened. Add spinach and cook until wilted.
Pour in heavy cream, simmer, then stir in Parmesan cheese. Thin sauce with reserved pasta water if needed.
Toss pasta with sauce and salmon, squeeze lemon juice, season with salt and pepper. Garnish with parsley.
Notes
For extra flavor, add a pinch of smoked paprika to the Cajun seasoning.
