Instructions
Cook pasta according to package instructions. Reserve 1/4 cup pasta water, drain, and set aside.
Rub salmon with Cajun seasoning. Sear in a skillet with olive oil 4-5 minutes per side until cooked. Flake into chunks.
Melt butter, sauté garlic and bell pepper until softened. Add spinach and cook until wilted.
Pour in heavy cream, simmer, then stir in Parmesan cheese. Thin sauce with reserved pasta water if needed.
Combine pasta and salmon, squeeze lemon juice, season with salt and pepper. Garnish with parsley and serve.
Notes
For extra flavor, add a pinch of smoked paprika to the Cajun seasoning.
