Stir in rice, smoked paprika, Cajun seasoning, black pepper, and salt. Toast for 2 minutes, stirring occasionally.
Pour in chicken broth, bring to a boil, then reduce heat, cover, and simmer for 18-20 minutes until rice is fluffy and broth is absorbed.
While rice cooks, heat 1 tbsp butter in a separate pan. Cook shrimp with Cajun seasoning and paprika for 2-3 minutes per side until pink and cooked through.
Fluff rice, fold in cooked shrimp, and adjust seasoning. Garnish with parsley or scallions, serve with lemon wedges.
