Cajun Garlic Paprika Shrimp and Rice

Ingredients
  

Protein

  • 1 lb large shrimp, peeled and deveined

Grains

  • 1 cup long-grain rice

Broth

  • 2.5 cups chicken broth

Vegetables

  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 1 red red bell pepper, diced
  • 1 green green bell pepper, diced

Fats & Oils

  • 2 tbsp olive oil or butter

Spices & Seasonings

  • 1 tsp smoked paprika
  • 1 tsp Cajun seasoning
  • 0.5 tsp black pepper
  • Salt to taste salt
  • 0.5 tsp crushed red pepper (optional)

Garnish & Serving

  • to taste fresh parsley or scallions
  • for serving lemon wedges

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Sauté diced onion and bell peppers until soft, about 5-6 minutes. Add minced garlic and cook for 1 minute.
  • Stir in rice, smoked paprika, Cajun seasoning, black pepper, and salt. Toast for 2 minutes, stirring occasionally.
  • Pour in chicken broth, bring to a boil, then reduce heat, cover, and simmer for 18-20 minutes until rice is fluffy and broth is absorbed.
  • While rice cooks, heat 1 tbsp butter in a separate pan. Cook shrimp with Cajun seasoning and paprika for 2-3 minutes per side until pink and cooked through.
  • Fluff rice, fold in cooked shrimp, and adjust seasoning. Garnish with parsley or scallions, serve with lemon wedges.

Notes

For extra flavor, add a dash of hot sauce or more Cajun seasoning.
