10-inch diameter, warmed
Additional Salsa
as desired
Tomatillo or regular prepared salsa (optional)
Instructions
Slice beef into strips, marinate with 1/2 cup salsa for 30 min to 2 hrs.
Cook rice and bean mix as per package, keep warm.
Stir-fry beef in 1 tsp oil until no longer pink, then set aside. Repeat with remaining beef.
Return beef to skillet, add rice and 1/4 cup salsa, cook 1-2 min.
Fill tortillas with beef mixture, fold, and serve with extra salsa if desired.
Notes
Use lean beef for a healthier option and customize salsa to taste.
