  • 1 medium butternut squash, peeled and diced
  • 1 cup lentils, rinsed
  • 1 piece onion, chopped
  • 2 pieces carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • to taste Salt and pepper
  • 2 tablespoons olive oil

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Sauté onion, carrots, and celery until softened.
  • Add garlic, cumin, and coriander; cook for 1 minute.
  • Stir in butternut squash and lentils, then pour in vegetable broth and bring to a boil.
  • Reduce heat and simmer for 25-30 minutes until tender. Season with salt and pepper before serving.
