Preheat oven to 450°F. Roast chopped butternut squash with 3/4 tsp salt and 1.5 tbsp oil for 30 minutes, rotating pans halfway.
Wilt spinach in butter with 3/4 tsp salt, then set aside. Prepare sauce by melting butter, cooking garlic, then adding flour, spices, and gradually milk, simmering until thickened.
Soften noodles in hot water for 3 minutes, then drain. Assemble lasagna in a greased pan: layer sauce, noodles, roasted squash, spinach, and cheese, repeating layers and topping with whipped cream and cheese.
Bake covered at 375°F for 30 minutes, then uncover and bake 10-20 minutes until browned. Let rest 10-15 minutes before serving.
