Instructions
Preheat oven to 350°F (175°C).
Heat olive oil, sauté onion and garlic until fragrant. Add rice and cook 2-3 mins. Stir in squash, cook 2-3 mins.
Mix in mushroom soup, stock, salt, pepper, and chicken. Add broccoli and top with cheese if desired. Cover and bake 45-50 mins.
Notes
For extra flavor, sprinkle cheese during the last 10 minutes of baking.
