Ingredients
  

Main ingredients

  • 2 tablespoons olive oil
  • 1 medium onion (diced)
  • 4 cloves garlic (minced)
  • 2 cups long-grain white rice
  • 2 cups raw butternut squash (cut into small cubes)
  • 1 can (10.5 oz) cream of mushroom soup
  • 2 cups broccoli (chopped)
  • 2 cups shredded rotisserie chicken meat
  • 3 cups vegetable stock
  • 1 tsp sea salt (plus more to taste)
  • 1/2 tsp black pepper
  • Optional Grated cheese for topping

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Heat olive oil, sauté onion and garlic until fragrant. Add rice and cook 2-3 mins. Stir in squash, cook 2-3 mins.
  • Mix in mushroom soup, stock, salt, pepper, and chicken. Add broccoli and top with cheese if desired. Cover and bake 45-50 mins.

Notes

For extra flavor, sprinkle cheese during the last 10 minutes of baking.
