Ingredients
  

Dry Ingredients

  • 95 g plain flour
  • 2 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 85 g dark chocolate chips or milk chocolate

Wet Ingredients

  • 225 g dark chocolate chopped
  • 56 g butter salted or unsalted
  • 2 eggs eggs room temperature
  • 100 g caster sugar or granulated sugar
  • 90 g Demerara sugar or raw sugar
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat oven to 160°C (320°F) with fan or 170°C (338°F) for conventional heating. Line a baking tray with parchment paper.
  • Melt 225g dark chocolate and butter in a heatproof bowl over simmering water. Stir until smooth, then stir in vanilla extract.
  • Whisk eggs, caster sugar, and Demerara sugar until light and fluffy, about 5 minutes.
  • Sift flour, cocoa powder, baking powder, and salt. Add chocolate chips and mix well.
  • Fold melted chocolate mixture into whipped eggs, then gently fold in dry ingredients. Scoop batter onto prepared tray, bake 12-14 minutes.

Notes

For the best texture, ensure eggs are at room temperature and fold the batter gently to maintain airiness.
