Instructions
Preheat oven to 160°C (320°F) with fan or 170°C (338°F) for conventional heating. Line a baking tray with parchment paper.
Melt 225g dark chocolate and butter in a heatproof bowl over simmering water. Stir until smooth, then stir in vanilla extract.
Whisk eggs, caster sugar, and Demerara sugar until light and fluffy, about 5 minutes.
Sift flour, cocoa powder, baking powder, and salt. Add chocolate chips and mix well.
Fold melted chocolate mixture into whipped eggs, then gently fold in dry ingredients. Scoop batter onto prepared tray, bake 12-14 minutes.

For the best texture, ensure eggs are at room temperature and fold the batter gently to maintain airiness.
