Instructions
Heat olive oil in a skillet, add onion and sweet potato, and sauté for 8-10 minutes.
Add garlic, onion powder, garlic powder, and paprika; cook for 30 seconds.
Pour in chopped tomatoes, simmer until heated through.
Create 4 indentations, crack eggs into them, cover, and cook for 6-7 minutes.
Season with salt and pepper, garnish with parsley, and serve.
