Ingredients
Shortbread Crust

Blueberry Filling

blueberries
reserve ½ cup for folding in

juice of 1 lemon

Instructions
Cube the butter, combine with sugar, flour, and salt in a food processor until dough forms.
Cook 1 cup of blueberries with ½ cup sugar and lemon juice until boiling, then add vanilla.
Puree the blueberry mixture, fold in reserved blueberries, and set aside.
Press half of the shortbread dough into an 8x8 inch pan as the base.
Spread blueberry filling over the base, then crumble remaining dough on top.
Bake at 375°F (190°C) for 35-40 minutes until golden, cool before slicing.
Notes
Chill the bars before cutting for cleaner slices.
