Blueberry Crumble Shortbread Bars

Ingredients
  

Shortbread Crust

  • 1 cup unsalted cold butter 2 sticks
  • 2 cups all-purpose flour
  • ½ cup sugar
  • ¼ tsp salt

Blueberry Filling

  • cups blueberries reserve ½ cup for folding in
  • ½ cup sugar
  • 1 unit lemon juice of 1 lemon
  • 1 tsp vanilla extract

Instructions
 

  • Cube the butter, combine with sugar, flour, and salt in a food processor until dough forms.
  • Cook 1 cup of blueberries with ½ cup sugar and lemon juice until boiling, then add vanilla.
  • Puree the blueberry mixture, fold in reserved blueberries, and set aside.
  • Press half of the shortbread dough into an 8x8 inch pan as the base.
  • Spread blueberry filling over the base, then crumble remaining dough on top.
  • Bake at 375°F (190°C) for 35-40 minutes until golden, cool before slicing.

Notes

Chill the bars before cutting for cleaner slices.
