Blueberry Coconut Chia Pudding recipe

A delicious and healthy chia pudding topped with blueberry sauce and fresh berries, perfect for a quick breakfast or snack.

Ingredients
  

Chia pudding base

  • 3/4 cup milk (oat or almond)
  • 1/4 cup full-fat coconut cream
  • 1 teaspoon vanilla extract
  • 1 tablespoon honey or pure maple syrup
  • 1/4 cup chia seeds

Blueberry sauce and topping

  • 1/2 cup blueberries (fresh or frozen) for topping
  • more for topping blueberries additional for topping
  • 1 teaspoon water for cooking blueberries

Instructions
 

  • Mix chia seeds with milk, coconut cream, honey, and vanilla. Let rest for 15 minutes, stirring halfway.
  • Simmer blueberries with water until soft, about 1-2 minutes, then mash to make sauce.
  • Pour chia pudding into bowls, top with blueberry sauce and fresh blueberries.
  • Serve immediately and enjoy!

Notes

For best flavor, prepare the chia pudding a few hours ahead.
