Blackberry Shortbread Wedges

Ingredients
  

Blackberries and Lime Mixture

  • 3 cups fresh blackberries
  • 0.5 lime juice of lime
  • 0.5 cup granulated sugar divided

Shortbread Crust

  • 2 cups all-purpose flour
  • 1 cup cold unsalted butter 2 sticks

Instructions
 

  • Preheat oven to 375°F (190°C) and grease an 8-inch round pan.
  • Mix blackberries, lime juice, ½ cup sugar, and cornstarch. Let sit.
  • Combine flour, remaining sugar, salt, and cut in butter until crumbly.
  • Press half of the shortbread into the pan, add blackberry mixture, then crumble remaining over.
  • Bake for 30-35 minutes until golden. Cool before slicing.

Notes

Chill the shortbread slightly before slicing for cleaner wedges.
