Blackberry Oatmeal Bars

Ingredients
  

Dough and topping

  • 1 1/2 cups all-purpose flour (regular or gluten-free*)
  • 1 1/2 cups uncooked quick-cooking oats (regular or gluten-free*)
  • 1 cup firmly packed brown sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup chopped pecans
  • 2 sticks unsalted butter (room temperature)
  • 2 cups fresh blackberries
  • 1 tablespoon granulated sugar
  • 1 tablespoon cornstarch

Instructions
 

  • Preheat oven to 350°F (175°C). Line a 9x9 inch pan with foil and spray with non-stick spray.
  • Toss blackberries with sugar and cornstarch; set aside.
  • Mix flour, oats, brown sugar, baking soda, salt, and pecans. Add butter and beat until coarse crumbs form.
  • Press half of the mixture into the pan, top with blackberries, then sprinkle remaining mixture on top without pressing down.
  • Bake for 30-35 minutes until golden. Cool completely before slicing into squares.

Notes

Store in an airtight container for up to 3 days for best freshness.
