Blackberry Crumble

Ingredients
  

Dough

  • 2 cups all-purpose flour
  • 2/3 cup granulated sugar
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon kosher salt
  • 3/4 cup unsalted butter (cut in small cubes)
  • 1 1/2 teaspoons vanilla
  • 1 large egg
  • 1 teaspoon apple cider vinegar

Blackberry filling

  • 4 cups blackberries (fresh or frozen)
  • 1/3 cup granulated sugar
  • 1 teaspoon cornstarch
  • 2 tablespoons lemon juice about half a medium lemon
  • 1 teaspoon lemon zest

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Mix flour, sugar, baking powder, and salt. Cut in butter until crumbly. Add vanilla, egg, and vinegar; combine.
  • Press half of dough into a 2-quart dish. Mix blackberries with sugar, cornstarch, lemon juice, and zest; spread over crust.
  • Top with remaining dough. Bake 40-45 minutes until golden brown.
  • Cool for 30 minutes. Serve warm, optionally with ice cream.

Notes

Use fresh or frozen blackberries for best flavor.
